4 medium zucchini, cut into 1-inch slices
Juice of 1 lemon
2 tablespoons olive oil
Salt and freshly ground pepper
4-ounce piece of Parmesan cheese
2 tablespoons minced fresh basil
Yield: 4 Servings
Steam the zucchini for 6 minutes. Combine the lemon juice and oil. Season with salt and pepper, and whisk well. Place the steamed zucchini in a serving dish, and top with the dressing and Parmesan shavings. (You can shave the cheese with a vegetable peeler.) Sprinkle with the basil, and serve immediately.
