Roasted Potatoes



1 small russet, red, or yukon gold potato, 4 oz, quartered lengthwise
1 teaspoon olive oil
1/2 teaspoon rosemary
1/4 teaspoon garlic powder
Dash of salt
Dash of black pepper
Sprinkle cayenne pepper (optional)

Yield: 1 Serving


Clean potato, quarter, and place on a baking sheet. Coat surfaces evenly with olive oil. Sprinkle rosemary, garlic, salt, and pepper over potato. For a spicy potato, sprinkle on cayenne pepper. Broil for 20-25 minutes or until cooked and lightly browned.
