Pasta with crabmeat and zucchini



8 ounces linguine
6 tablespoons olive oil
1 shallot, peeled and minced
1 can crabmeat
2 small zucchini, washed and sliced
Generous pinch each of cinnamon, cardamom and saffron (or whatever spices you like)
¼ cup almonds, ground
Salt and freshly ground pepper

Yield: 4 servings (appetizer portion)


Cook linguine following package instructions. In a frying pan, heat 1 tablespoon olive oil, add shallots and cook a minute or two. Add crabmeat, zucchini and spices and sauté for a few minutes. Season to taste. Pour pasta into a warmed serving bowl, and add crabmeat/zucchini mixture. Mix well. Sprinkle with ground almonds and drizzle with olive oil. Taste and correct seasoning if necessary. Serve immediately.
