Duck Breasts with Gingered Plums Compote


Plums with ginger make a great accompaniment to duck. Here’s how I serve it.


4 duck breasts (magrets), grilled

Yield: 4 servings


Start with the Plums With Ginger recipe. When plums are tender, remove them from skillet and reduce i.e., continue cooking the sauce until it’s quite syrupy. Pour sauce over magrets and serve the plum compote as an accompaniment (a sort of soft chutney).
