Orange Salad



2 cups salad greens (mesclun mixed with arugula or red oak lettuce with frisée)
1 tsp shallots, minced
1/2 seedless mandarin orange, small
1/4 cup green beans, trimmed and blanched

Yield: 2 Servings


Peel orange. Cut off skin and white pith. Slice off and remove the skin that separates the wedges. Toss the salad greens, shallots, green beans and orange slices. Add dressing and serve on individual plates.
