Mint Marinade



2 tablespoons olive oil
1½ teaspoons Dijon mustard
2 medium shallots
½ cup fresh mint
Salt and pepper to taste

Yield: 2 Servings


Combine oil, mustard, shallots and mint in the bowl of a food processor and pulse till medium-textured paste is formed. This is most often used on meats, such as grilled lamb chops. Spread the minty paste on each side of the chops, further season to taste and let marinate at room temperature for 30 minutes.
