1⁄2 cup apple juice
Juice of 1 lemon
1 Granny Smith apple, peeled, cored and cubed
Yield: 4 servings
Open and drain the oysters, reserving their liquid for another use, perhaps a soup (if your fishmonger opens the oysters for you, ask him to give you the liquid, too). Put 3 oysters in each of 4 martini glasses. Put the apple juice, lemon juice and a few cubes of the apple in a bowl. Mix well and distribute over the oysters. Serve immediately. Note: An oyster knife makes it easy to open oysters, and a thick rubber glove makes it safe. Oysters can be purchased shucked.
