A nice autumnal accompaniment to white meat, and you can substitute pears if you like. With a little dollop of whipped cream or yogurt, these apples make a nice dessert, too.
Ingredients
2 apples
1 orange
2 tablespoons honey (clover or acacia)
Freshly ground pepper
Yield: 4 servings
Recipe
Peel and core the apples and cut each into 8 slices. Cut the unpeeled orange into thin slices. Layer the orange slices in the bottom of a steamer, cover with a layer of apple slices, and end with a layer of orange slices. Steam for 6 to 7 minutes, until the apples are tender and infused with orange perfume. Discard the oranges and serve the apples warm, drizzled with honey. Season with pepper to taste.
