Banana Mousse



3 very ripe bananas, peeled
Juice of 2 lemons
Juice of 3 oranges
2 tablespoons honey
1 teaspoon vanilla extract
1 cup yogurt
3 egg whites

Yield: 4 servings


Mash the bananas with the lemon and orange juice. Add the honey and vanilla extract and mix well. Add the yogurt and mix well. In a separate bowl, beat the egg whites until they are stiff, and fold them gently into the banana mixture. Refrigerate for at least 1 hour before serving.
