Mint Marinade

INGREDIENTS

2 tablespoons olive oil
1½ teaspoons Dijon mustard
2 medium shallots
½ cup fresh mint
Salt and pepper to taste

Yield: 2 Servings

RECIPE

Combine oil, mustard, shallots and mint in the bowl of a food processor and pulse till medium-textured paste is formed.

This is most often used on meats, such as grilled lamb chops [5]. Spread the minty paste on each side of the chops, further season to taste and let marinate at room temperature for 30 minutes.
