Homemade Soup

Today I had a bowl of homemade split pea soup (made with organic dried split peas, water, carrots, purple potatoes, onion, spices, and a little chopped ham) along with a fresh ripe pear and some dark chocolate for dessert :) Very satisfying. I love split pea soup because it is filling and economical to make!

So satisfying!

I've just had a wonderful lunch that I had to share - made a tartine, I guess, using a piece of toasted whole wheat raisin bread (homemade), spread with some goat cheese, topped with sliced pear and a piece of prosciutto. Then on the side, some raw sugar snap peas (I love their crunch) and some roasted beets, a pleasure of mine that I discovered only in the past few years (as a child, I thought beets were horrible). Totally filling, satisfying, and healthy!

Yummy

A salad made from leftover roast chicken and a dressing made from a splash of olive oil and a squeeze of lemon. I also like to throw in a ahndful of cashews!

Summer lunch

A tomato and spinach sandwich on whole wheat (not, alas, my homemade bread, as it was a very busy weekend), a very juicy peach, and two chocolate-chip cookies. No protein -- I will have to grab some yogurt this afternoon -- but I didn't feel like lunch meat or, God forbid, a leftover hotdog *shudder*. I will have to do some pre-preparation tonight, perhaps a nice tuna salad?

egg salad

An egg salad sandwich made with cucumber and tomato, on whole wheat bread, and fruit salad from, of all places, a sandwich shop in a mall food court. They do all their own baking, though, so that made it a lot more pleasant than the generic bread one sometimes finds.

Staying the course

I had a cup of homemade black bean soup followed some sauted chicken with cauliflower. I've got tea steeping now and will have a bit of dark chocolate with it. I love making soups-they're easy and a great way to fill up at mealtime for very little calories!

New recipe

My husband loves meatloaf, so I tried a new recipe. It called for ground turkey and lots of shredded vegetables-onion, red pepper and zucchini. Served it with an orzo tomato feta salad I'd made yesterday and steamed cauliflower. I'm trying to serve more vegetables with every meal. The bags you can throw in the microwave are fantastic! Cooks them perfectly every time in 5 minutes or so. Now I have no excuse not to have a vegetable with my meal.

strawberry salad w/tomatoes

Today I had the strawberry salad w/tomatoes recipe listed on this site. I must admit, it was quite a flavorful dish but I'm gonna buy better tomatoes next time. I made the mistake of buying these on the vine tomatoes thinking theyd be good only to be disappointed when slicing them open. I'll be buying the better quality of tomatoes I usually buy from now on. Maybe that'll make it taste even better. Plus I didnt quite have the right amount of honey so the lemon juice really punches you. Will try again though.

Today I had scrambled eggs

Today I had scrambled eggs with mixed vegetables topped with feta cheese. I would not have picked eggs for lunch until reading the books! And would never have paired them with peas, cauliflower and green beans. There was zucchini in that mix too, but I would have eaten eggs with zucchini before the book. I love zucchini and will eat it any time, any where. I also had a half a yogurt. I am not a great yogurt lover, but I'm trying to eat it once a day. I've lost 7 pounds and have been able to hold steady for a few weeks now. That's big for me, usually I lose and then slowly it comes right back on!

leftovers

I made a pot of red beans with smoked turkey keilbasa yesterday for dinner. It had been raining all day and I just decided to make a huge pot of soup. It was more like a stew because it was so thick but it turned out delicious so I had some for lunch today and I think it tasted even better than yesterday! Glad to see the website back up too!

Love to grill

Today I made grilled chicken sandwiches with a Dijon sauce topped with red onion and tomato. Served with a side of cucumber salad I threw together while the chicken grilled and also some lentil salad I'd made earlier this week.

Spaghetti Bolognese

I am just about to go and prepare some spaghetti bolognese. The sauce is homemade from a few days ago, and I'll cook up some spaghetti and top with a sprinkling of parmesan cheese.

Today Saturday

I took a leaf out of Bliss's book and made the soup with a slight variation. I used parmesan instead of feta as I had recently put all the 'ends' of pieces of parmesan through the grater attachment on the food processor and have a tub full that would normally have been thrown away as it was past grating by hand. It is fine used in soups and risottos. Frugality again!!!!

Victoria Day picnic

So, for a picnic en famille, small sandwiches on home-made whole-wheat bread (egg salad, crab salad, and ham-and-cheese), black grapes, strawberry-rose iced tea, and citrus madeleines with a citrus-flavoured glaze.

Maybe some sort of chicken salad with fresh bread? And some sort of sweet pastry for afterwards, so she can have it 'to go' if you run out of time. Soup, if it's cold.
