Spinach with Raisins and Pine Nuts

INGREDIENTS

2 pounds spinach
2 tablespoons olive oil
2 tablespoons golden raisins
1/4 cup pine nuts
Salt and freshly ground pepper

Yield: 4 Servings

RECIPE

Wash the spinach and trim, if necessary.

Heat the oil in a large skillet. Sauté the raisins and pine nuts until golden, 1 to 2
minutes. Remove from the skillet, and set aside.

Add the spinach to the skillet. Season with salt and pepper to taste, cover, and cook over medium heat for 3 to 5 minutes or until the spinach is wilted. Add the raisins and pine nuts, and toss constantly while cooking for 1 more minute. Serve immediately.

FRENCH WOMAN'S MANIFESTO

French women choose their own indulgences and compensations.  They understand that little things count, both additions and subtractions, and that as an adult everyone is the keeper of her own equilibrium.
