Spanish Sandwich

My friend Marisa visited recently, and as we shopped together we looked at those pale red February tomatoes and passed by disgusted, craving for the real thing. When she saw the international variety of cheeses offered down the aisle, she smiled and proclaimed we were going to have tomatoes! She bought an edge of Manchego cheese, Spanish ham and Napa sun-dried tomatoes and made us her “winter” sandwich. Bonito.

INGREDIENTS

8 slices of whole grain bread
4 slices raw Spanish ham or prosciutto
8 slices of manchego cheese
1/2 cup sun dried tomatoes

Yield: 4 servings

RECIPE

Place a slice of cheese on each of the 4 slices of bread. Add the ham, the tomatoes, another slice of cheese and top with a slice of bread. Put in broiler for a few seconds until cheese starts to melt. Serve with a small glass of red wine...rioja for local color.
