mixed vegetable soup
Has anyone made this recipe from 'French Women for all Seasons'? I ask as it came out very, very think so I had to add a lot more water to it which means that I have ended up with far more servings than 4. That would be OK except I am home alone this week and it seems a shame to waste so much soup! Plus the fact that the smell from it in the fridge is not so pleasant! I suppose the quantity depends on the size of the vegetables but still, it's a LOT of soup... I don't want to have this problem again if make another soup recipe.

I make large batches
of different soups at a time (there are only 2 of us), and I freeze them (both single and double servings) as soon as they have cooled. This way, we have fresh soup when required and nothing is wasted. I have tried most of the soups in the books and usually end up with more than I expected - but it just means we get more meals out of them! Happy soup making :-)Marilyn

Will it freeze? If so split it into single servings and freeze for future use.lilaclady

Thanks, but it's past its best now so I think it's heading for the bin! I just wondered if I tackled another soup recipe if I was likely to end up with too much soup again - the quantities seem 'out'.Marilyn

Cut down
The recipe serves 4 and probably as a main course. In the Winter menus section (page 256) it is served just with a slice of bread followed by a yoghurt and half a grapefruit. If it's too thick cut down on the potatoes as they are the thickening agent. Better luck next time.lilaclady

main course
Well it was my evening meal, as I am fortunate usually to have my main meal in the middle of the day, and I couldn't manage anything to follow it and certainly didn't need bread!! So in that way it was my only course! If I were to make it again, I would add a lot more liquid and cut on the potatoes, as you say, although I did cut down a little this time.Lila

I make a lot of soups and have never made a soup recipe that only serves four. Most make about 8-10 cups. My husband and I can have it for several meals over a the course of a week and then I freeze the rest. They freeze wonderfully. If you do not want to have left overs I would suggest cutting the recipe in half and not using more than 4 cups of liquid. Hope this helps!
