Mahi Mahi
I'm making Mahi Mahi tomorrow night for dinner. I can't seem to locate any recipes online or in the FWDGF cookbook for Mahi Mahi. Does anyone have a good recipe? Or can anyone suggest a recipe in the cookbook or on the website for another fish that would begood with Mahi Mahi?

Parchment Paper
I don't have Mireille's cookbook here with me at work, but I make Mahi Mahi often and I bake it in the oven in parchment paper. I cut a large piece and put the fish in teh middle. I then drizzle it with a little olive oil, add some fresh cracked pepper and sea salt, and then add either some fresh or dried herbs. I like to use dill. I then fold it up like an envelope and bake it for about 18-20 minutes at around 375. The cooking time will depend on the thickness of the fish and quantity. When it is done, I squeeze some fresh lemon over it. It always comes out moist and delicious!twinklebree
