Jarlsberg, Apple and Mushroom Salad
INGREDIENTS
1 pound mushrooms (Crimini go well with the cheese), cleaned and thinly sliced
1 medium Golden Delicious apple, cored and cut into thin slices
3 tablespoons lemon juice
For the Dressing :
2 tablespoons red wine vinegar
2 tablespoons Meaux mustard
8 tablespoons walnut oil
2 tablespoons freshly chopped parsley
Pinch of curry
Salt and freshly ground pepper
4 ounces Jarlsberg cheese, cut into strips 1 inch long and 1⁄8 inch thick
1 large head lettuce, rinsed and dried, leaves torn
Yield: 6 servings

RECIPE
Sprinkle the mushroom and apple slices with the lemon juice.
For dressing: Mix all the dressing ingredients together, seasoning with salt and pepper to taste. Add the mushroom-apple mixture and cheese to the dressing. Toss gently with the lettuce. Serve immediately.
Note: You can replace lettuce with mesclun or a variety of salad greens, including frisee and endives.
