Pour 1 quart whole or 2% milk into a saucepan or pot over medium-low heat until bubbles appear around the edge and steam rises from the surface.
Remove the saucepan from the heat and insert thermometer.
When the temperature reaches 110-115 degrees, add the starter. Do this by adding some of the heated milk to the starter and stirring well. Then pour the mixture back into the sauce pan. (I use a bit of yogurt from my previous batch as a starter, though you may use store bought yogurt if you like).
Stir slowly until well mixed.
Fill all 8 jars with milk mixture.
Cover securely with lids and place the jars into the machine (which is actually just a temperature controlled warmer).
Place top on and set for about 10 hours (Note: this will vary by machine, consult your instructions guide).
When done, chill the jars in the refrigerator for a few hours before serving. Yogurt will keep for about 2 weeks in the refrigerator.
Serve with a tiny drizzle of honey and enjoy!
